A brand new recipe, a brand new year!
So on this new installment of the recipe of the month, I am here to post this yummy cookie that a friend of mine is going to make so I am hoping that she will save some for me. I kinda want to make them too, but I have no brownie mix.
WHAT YOU WILL NEED:
• 1 20-ounce package Ghirardelli Brownie Mix
• 2 tablespoons all-purpose flour
• 8 tablespoons (1 stick) unsalted butter, melted
• 2 large eggs
• 2 cups finely chopped Ghirardelli Peppermint Bark, divided
WHAT TO DO:
Preheat oven to 350°F. Set aside 2 ungreased baking sheets.
In a large mixing bowl, combine brownie mix, flour, melted butter and eggs with a wooden spoon until the ingredients are just combined, about 30 seconds.
Fold in 1 cup of peppermint bark. Using a small scoop or spoon, drop cookie dough by generous spoonfuls on baking sheet, about 2 inches apart. Press ½ teaspoon peppermint bark onto the top of each ball of batter.
Place baking sheets one at a time into the oven. Bake until the cookies are firm around the edges but still soft in center, 10-12 minutes. Remove from oven and cool for 2-3 minutes. Using a metal spatula, transfer cookies to wire racks.
Serve warm or let cool for 20 minutes before storing.

Sugar Cookie Drops!!!

Ingredients
- 1 cup butter
- 1 cup vegetable oil
- 1 1/2 cups confectioners' sugar
- 1 cup white sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 4 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon cream of tartar
- 1/2 cup white sugar for decoration
Directions
- Preheat oven 350 degrees F (175 degrees C).
- In a large bowl, cream together the butter, oil, confectioners' sugar, and 1 cup white sugar until light and fluffy. Beat in eggs one at a time, and stir in the vanilla. Combine the flour, baking soda, and cream of tartar; stir into the creamed mixture. Roll dough into 1 inch balls, and then roll the balls in remaining white sugar. Place onto ungreased cookie sheets, and flatten with a fork.
- Bake for 8 to 10 minutes in the preheated oven, or until the edges begin to brown. Cool on wire racks.
