Recipe of the month

Ingredients
3 3/4 cups bread flour, divided
1/4 cup white sugar
1/4 cup shortening
1 teaspoon salt
1 (.25 ounce) package rapid rise yeast
1/2 cup warm water (120 to 130 degrees F/50 degrees C)
1/2 cup warm milk
1 egg
2 tablespoons butter, melted
Directions
1.In a large bowl, stir together 2 cups flour, sugar, shortening, salt and yeast. Add water, milk and egg. Beat with electric mixer on low speed 1 minute, scraping bowl frequently. Add the remaining flour, 1/4 cup at a time, until the dough comes together.
2.Turn the dough out onto a lightly floured surface and knead until smooth and elastic, about 8 minutes. Place in greased bowl and turn greased side up. Cover and let rise in warm place until doubled, about 1 hour. Dough is ready if indention remains when touched.
3.Turn dough out onto a lightly floured surface and divide in half; cut each half into 24 pieces. Form the pieces into rounds. Place the rolls close together in two lightly greased 9 inch round cake pans. Brush with melted butter. Cover and let rise in warm place about 30 minutes or until doubled. Cover the rolls with a damp cloth and let rise until doubled in volume, about 40 minutes. Meanwhile, preheat oven to 400 degrees F (200 degrees C).
4.Bake in preheated oven for 12 to 18 minutes, until golden brown.

Recipe of the Month

Berry Tasty Muffins

Prep time: about 40 minutes

Ingredients:

  • 1 c. flour
  • 1 c. oatmeal
  • 3 tbsp. sugar
  • 1 tsp. salt
  • 4 tsp. baking powder
  • 1 c. blueberries, washed
  • 1 egg
  • 1 c. milk
  • ¼ c. vegetable oil
  • nonstick cooking spray

Utensils:

  • oven (you'll need help from your adult assistant)
  • mixing spoon
  • 2 large bowls
  • fork
  • muffin/cupcake tin
  • paper muffin/cupcake liners
  • wire rack for cooling muffins
  • measuring cups and spoons

Directions:

  1. Preheat oven to 400° F (200° C).
  2. In a large bowl, mix together the flour, oatmeal, sugar, salt, and baking powder.
  3. Mix in blueberries.
  4. In another bowl, break the egg and use a fork to beat it just a little bit. Then add the milk and vegetable oil, and mix.
  5. Add egg mixture to the dry ingredients in the large bowl.
  6. Using a mixing spoon, mix about 25 or 30 times. Don't mix too much! Your muffin mixture should be lumpy, not smooth.
  7. Line a muffin tin with paper liners or lightly spray with nonstick spray. Spoon in the muffin mix. Fill each muffin cup about 2/3 of the way up.
  8. Bake for about 20 minutes.
  9. When muffins are finished baking, remove from muffin tin and cool them on a wire rack.
  10. Enjoy your berry tasty muffins!

Fried Fish Tacos
Prep Time 45 min. Cook Time - Serves 61.Ingriedients1 quart vegetable oil12 corn tortillas1 cup all-purpose flour2 teaspoons salt1 cup beer (not dark) 1 pound cod fillet, cut into 3- by 1-inch stripsShredded lettuceSour CreamAvocado slicesChopped or sliced radishRed or green salsaLime wedges
2. Cooking DirectionsPreheat oven to 350 degrees F.Heat 1 inch oil in a 10-inch heavy pot (2 to 3 inches deep) over moderate heat until a deep-fat thermometer registers 360 degrees F.Meanwhile, separate tortillas and make 2 stacks of 6. Wrap each stack in foil and heat in oven 12 to 15 minutes.While tortillas warm, stir together flour and salt in a large bowl, then stir in beer (batter will be thick). Gently stir fish into batter to coat. Lift each piece of fish out of batter, wiping any excess off on side of bowl, and fry fish in batches, turning once or twice, until golden, 4 to 5 minutes. Drain on paper towels.Increase oil temperature to 375 degrees F and refry fish in batches, turning once or twice, until golden brown and crisp, about 1 minute. Drain on paper towels.Assemble tacos with warm tortillas, fish, and accompaniments. Yield: 6 servings

Dream Catcher
5" ring 4 yds Suede lacing 1/8 inch 3 yds Imitation sinew (waxed nylon string) 1 Small Concho 12 Pony Beads 16 Pony Beads Feathers
If you cannot obtain the supplies, try making one using a small green branch from a tree about 1cm in diameter and 1 meter long. Just bind the ends of the branch together and then make the web in the same way.

1. Cut 8 ft. of the suede lacing. Glue one end of the lacing to the ring. Wrap the suede lacing around the ring until you reach the starting point again. Be careful not to twist the lacing. Glue the end of the lacing to the ring. Hold it in place with a clothespin until the glue dries (Figure 1).
2. To make the web, tie one end of the imitation sinew to the ring (Figure 2). Make nine half hitch knots around the ring spacing them about 1-1/2" apart (Figure 3). Make the last hitch a little closer to the first knot as this prevents a large gap from forming. Keep the thread pulled snug between the knots.
3. Begin the next row of the web in the middle of the thread that you have already woven on row 1. (Figure 4). Continue weaving in the same way until you have a small hole left in the center. Tie a double knot in the cord, add a tiny drop of glue to the knot and cut off remaining thread when dry. (Figures 5 & 6).
4. To make the loop to hang your Dream Catcher, use a 12" piece of suede lacing. Fold it in half and tie a knot in the open end. At the top of the ring, attach the lacing by slipping the loop end through the ring and then around the ring and over the knot. Pull the lacing tight to secure it in place.
5. To make the hanging sections, cut three 8" pieces of suede Tie two 8" pieces of suede lacing about one third of the way up each side of the ring using a double knot. Slip 3 colored pony beads onto each piece of lacing and secure with a knot.
6. Using the last 8" piece of lacing to attach small concho to top middle of the ring. Slip three pony beads onto each piece of lacing.
7. Finally, push two feathers up inside the beads on each piece of lacing except the one hanging from the concho. Glue the feathers if they are loose. The last 4 feathers are attached 2 each side of the concho.
To make larger sizes: 12 inch rings needs approx. 7 yds of 1/8 suede lacing to bind it 9 inch ring - 6 yds 6 inch ring - 4 yds Remember that you will need extra suede for the laces and hanger. )
THIS IS JUST ONE WAY TO MAKE DREAMCATCHERS. I MAKE MANY DIFFERENT STYLES, AND NO TWO EVER LOOK EXACTLY THE SAME. BE CREATIVE, AND SEE HOW MANY DIFFERENT ONES YOU CAN MAKE.

A DREAMCATCHER LEGEND

The elder passed on his vision to his people and even today, many of us use the dreamcatcher as the web of our life. It is hung above our beds or in the home to sift dreams and visions. The good of our dreams are captured in the web of life and carried with them...but any bad dreams escape through the center hole."

RECIPE OF THE MONTH

Easy Mint Chocolate Chip Ice Cream

INGREDIENTS (Nutrition)2 cups 2% milk 2 cups heavy cream 1 cup sugar 1/2 teaspoon salt 1 teaspoon vanilla extract 1 teaspoon peppermint extract 3 drops green food coloring (optional) 1 cup miniature semisweet chocolate chips
DIRECTIONSIn a large bowl, stir together the milk, cream, sugar, salt, vanilla extract and peppermint extract until the sugar has dissolved. Color to your liking with the green food coloring. Pour the mixture into an ice cream maker, and freeze according to the manufacturer's instructions. After about 10 minutes into the freezing, add the chocolate chips. After the ice cream has thickened, about 30 minutes later, spoon into a container, and freeze for 2 hours.

Easter Day is Tommorow

Mint and Fruit Smoothie
PREP TIME 10 Min READY IN 10 Min
INGREDIENTS (Nutrition)1/4 cup red seedless grapes, frozen 1/4 cup unsweetened applesauce, or to taste 1 tablespoon fresh lime juice 3 frozen strawberries 1 cup cubed fresh pineapple 3 fresh mint leaves DIRECTIONSPlace frozen grapes, applesauce, and lime juice into a blender. Puree until smooth. Add frozen strawberries, cubed pineapple, and mint leaves. Pulse a few times until the strawberries and pineapple are in small bits.

Buttery Soft Pretzels
PREP TIME 2 Hrs COOK TIME 10 Min READY IN 2 Hrs 20 Min
INGREDIENTS (Nutrition)4 teaspoons active dry yeast 1 teaspoon white sugar 1 1/4 cups warm water (110 degrees F/45 degrees C) 5 cups all-purpose flour 1/2 cup white sugar 1 1/2 teaspoons salt 1 tablespoon vegetable oil 1/2 cup baking soda 4 cups hot water 1/4 cup kosher salt, for topping
DIRECTIONSIn a small bowl, dissolve yeast and 1 teaspoon sugar in warm water. Let stand until creamy, about 10 minutes. In a large bowl, mix together flour, 1/2 cup sugar, and salt. Make a well in the center; add the oil and yeast mixture. Mix and form into a dough. If the mixture is dry, add one or two tablespoons of water. Knead the dough until smooth, about 7 to 8 minutes. Lightly oil a large bowl, place the dough in the bowl and turn to coat with oil. Cover with plastic wrap and let rise in a warm place until doubled in size, about 1 hour. Preheat oven to 450 degrees F (230 degrees C). In a large bowl, dissolve baking soda in hot water. When risen, turn dough out onto a lightly floured surface and divide into 12 equal pieces. Roll each piece into a rope and twist into a pretzel shape. Once all of the dough is all shaped, dip each pretzel into the baking soda solution and place on a greased baking sheet. Sprinkle with kosher salt. Bake in preheated oven for 8 minutes, until browned.

Leprechaun Pie
Ingredients5 squares (1-oz./28 g each) white chocolate 1/4 cup (50 mL) whipping cream 4 oz. (125 g) cream cheese, softened 1/2 tsp. (2 mL) liquid green food coloring 1/2 tsp. (2 mL) vanilla or peppermint extract 1/2 cup (125 mL) powdered sugar 1 cup (250 mL) whipping cream, whipped until stiff 1 9-inch (23 cm) graham cracker or chocolate crumb crust 1/2 cup (125 mL) mint chocolate chips or green melting wafers (the kind for candy-making) additional candies or sprinkles, if desired Cooking InstructionsIn a large, microwave-safe bowl, combine the white chocolate and 1/4 cup (50 mL) of the whipping cream. Microwave on high power, 30 seconds at a time, stirring after each time, until the chocolate is completely melted and the mixture is smooth. With an electric mixer, beat the softened cream cheese, the green food coloring, the vanilla or peppermint extract and the powdered sugar into the chocolate mixture until everything is evenly blended. Gently fold in the whipped cream, taking care not to deflate the cream, until no white streaks remain. Spoon into the prepared crumb crust, cover with plastic wrap and chill for at least 4 hours or overnight. Melt the chocolate chips or green melting wafers in a double boiler over hot water, stirring until smooth. Drizzle over top of the chilled pie, then return to the refrigerator until set. If you wish, you can decorate the top of the pie with additional green candies or sprinkles before serving. Servings: 6 to 8

Pumpkin Chip Cupcakes INGREDIENTS 1 cup all-purpose flour 3/4 cup whole wheat flour 1 teaspoon baking powder 1 teaspoon baking soda 1/2 teaspoon salt 1/2 teaspoon ground cinnamon 1/4 teaspoon ground nutmeg 2 eggs, lightly beaten 1 cup canned pumpkin 1/2 cup vegetable oil 1/2 cup honey 1/3 cup water 1/2 cup chopped walnuts miniature chocolate chips FROSTING: 1 (8 ounce) package cream cheese, softened 1/4 cup butter or margarine, softened 1 teaspoon vanilla extract 2 cups confectioners' sugar

DIRECTIONS In a large bowl, combine the first seven ingredients. Combine the eggs, pumpkin, oil, honey and water; mix well. Stir into dry ingredients just until combined; fold in walnuts and chocolate chips. Fill greased or foil-lined muffin cups three-fourths full. Bake at 350 degrees F for 20-25 minutes or until a toothpick comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely. For frosting, in a small mixing bowl, beat the cream cheese, butter and vanilla until fluffy. Gradually beat in confectioners' sugar until smooth. Frost cooled cupcakes.

Dark Chocolate-Walnut Carmel Pie
active time:25 min total time1 hour 5 min plus chilling and cooking makes:12 servings

9-inch Baked pie Shell,1 c. sugar,1/4 c. water,1 1/4 c. heavy or whipping cream,8 oz. semisweet chocolare,cut up2 tbsp. butter or margarine,2 tsp. vanilla extract,1 3/4 c. walnuts,toasted and coarsely chopped
Prepare 9-inch Baked Pie Shell as recipe directs,but bake crust about 2 min longer after removing pie weights or until deep golden.Cool pie shell on wire rack at least 15 min.In heavy 3-quart saucepan,heat sugar and water on medium-high until sugar dissolves and turns amber in color,15 min,swirling pan occasionallu..Meanwhile,in microwacve-safe 1-cup loquid measuring cup,heat 3/4 cup crean in microwave on High 45 seconds or until warm.Place remaining 1/2 cup cream in refrigerator to keep cold for whipping later.

Recipe of the Week

Turkey Casserole
1-1/2 cup cubed cooked turkey
3 cups cooked rice
1 cup sliced cooked asparagus
1 cup turkey gravy 1/2 cup dairy sour cream

In a large bowl mix together turkey ,rice and asparagus.Combine gravy and sour cream.Pour over turkey mixture and mix well.Turn into a greased 1-1/2 quart casserole.Bake in a 350f degree oven for 30 to 40 minutes. Make 4 servings.

Candy Cane Cocoa

Prep Time 5min. Cook Time 10min. Ready In 15

Ingredients (Nutrition)
4 cups milk
3 (1 ounce) squares semisweet chocolate,chopped
4 peppermint candy canes,crushed
1 cup whippes cream
4 small peppermint candy canes

Directions
In a saucepan,heat milk until hot,but not boiling.Whisk in the chocolate and the crushed peppermint candies until melted and smooth.Pour hot cocoa into four mugs,and garnish with whippes cream.Serve each with a candy cane stirring stick.

ABOUT 500G ORANGE JUICE

DIRECTIONS
PUT FRUIT AND YOGURT IN A BLENDER AND TOP UP WITHE ORANGE JUICE UNTIL NICELY COVERED.WHIZ - ADD MORE JUICE IF TOO THICK. DRINK ASAP. KEEPS IN THE FRIDGE FOR ABOUT A DAY (MAKE SURE YOU COVER IT WITH CLINGFILM!).

Quick Chocolate Mousse

INGREDIENTS(Nutrients)
1(14 ounce) can EAGLE BRAND Sweetened
Condensed Milk
1 cup cold water
1 (4 serving size) package instant chocolate flavor
pudding mix
1 cup whipping cream,whipped

DIRECTIONS
In large bowl,combine sweetened condensed milk and
water.Add pudding mix;beat well.Chill 5 minutes.
Fold in whipped cream.Spoon into serving dishes;
chill.Garnish as desired.Store leftovers covered in
refrigerator.
